Blackened Spice Mix:
1/2 cup paprika
1 tablespoon salt
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon cayenne pepper
1 tablespoon white pepper
1 tablespoon black pepper
1 tablespoon dried thyme
2 tablespoons dried oregano
4 (14-ounce) Meyer Natural Angus Prime New York Strip Steaks
2 tablespoons vegetable oil
1 medium red onion, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 medium zucchini, thinly sliced
1. Make spice mix: blend spices; mix well. Sprinkle both sides of 4 steaks with spice mixture (save any remaining blackened spice mix in an airtight container for future use).
2. Heat oil in cast-iron skillet over high heat. When oil is shimmering, add steaks. Cook 4 minutes each side for medium rare; otherwise, cook to desired degree of doneness.
Remove steaks from skillet; cover and keep warm.
3. Add vegetables to skillet and cook, stirring constantly, 2 to 3 minutes, until just beginning to soften. To serve, slice each steak. Place each steak on serving plate and top each with 1/4 of cooked vegetables.
